Quick lunch at home…

The trick with cooking at home and not losing time is all about planning.

I’m an efficiency guy because i’m lazy. 

So yesterday, when i had a nice duck roasted in the oven, i knew what i would do with it: one meal with the fresh roasted meat, one goat-duck salad, one pizza and leftovers in a baguette sandwich.  So i had a pizza dough prepared at the same time. 

Today, i had a meeting at home and worked on the computer all morning. When i work, i get absorbed in what i do and time flies. I looked at the time, it was already 13h30. I was hungry for something good. 

So i made myself a small duck – goat cheese pizza. This is one of my signature recipe. Eating it is a sensual experience. Making it is dead simple. Here is how i do it. 

Start the oven at 425F

Roll the pre-pared pizza dough – 3 min

Cook onions in the pan with cranberries and a touch of maple syrup until caramelized – 5 min

Build the pizza: sauce, duck, goat cheese, onions & cranberries, cheddar and top that with a touch of rosemary. – 5 min. 

Cook for 15 min. While the pizza is in the oven, clean up. 

Heat up a bowl of cream of carrot and boil water for tea. 

Broil for 3 min. 

Serve. 

Lunch is prepared, enjoyed and done in 45 min.
