Pistachio and Cranberry Crispy Chocolates…

In the last year, I have experimented a lot with chocolate. I have a sweet tooth. When you look at chocolate recipes online, it seems complicated… melting in a double boiler, etc…  

And when it’s complicated, it’s easier to fail… 

I like simplicity, speed and above all ease in cooking. Once I understand the principle, I get to work to simplify as much as possible.  So here is the result of several experiments…

Difficulty: Super easy. 

Time: 10-15 min.

Melt 3-4 cups of semi-sweet chocolate chips in the microwave.  Yes, yes, in the microwave!  The trick is to do it gradually. You heat for 30 seconds at a time and then take it out and stir it a little each time.  The first time you take it out, it’s still hard, but stir it a little. Usually about 120 seconds is enough but it varies depending on the power of the microwave.  You want a soft creamy consistency.

In another cup, you pre-mixed about 2-3 cups of a mixture of cranberries (1/3), pistachios (1/3) and a crunchy cereal (1/3) here I used Vector. 

Once the chocolate is melted, you integrate the chocolate mixture and you put it in a silicone mold that you have just lightly oiled or buttered beforehand.

You send it to the freezer or outside for 15 minutes and that’s it!
